Breadfruit Salad

Breadfruit is abundant in Dominica. It came from the family of jackfruit and mulberry. It originated from the South Pacific but gradually spread to the Oceania, then, to the Caribbean. Breadfruit is a staple food in the region featured in a variety of recipes, including fritters and desserts. In this salad recipe, unripe breadfruit is used to blend in with carrots and sweet peppers.

1 pc breadfruit, peeled and cubed

1 pc carrot, grated

2 pcs sweet peppers, chopped

1 tbsp. onion, chopped

2 tsp vinegar

1 tbsp. mustard

1/8 cup mayonnaise

Salt and Pepper to taste
